Perry’s Blueberry Pancakes

  • 1 cup organic whole wheat flour

  • 1 tbsp baking powder

  • 1/2 tsp baking soda

  • 1/4 tsp sea salt

  • 1 tbsp honey

  • 1 tbsp olive oil (cold-pressed is best)

  • 1 1/4 cup coconut or soy milk (or regular milk)

  • 1/2 cup blueberries

Mix dry ingredients together, then add wet.  Don’t over-mix, just until all ingredients are mixed.  Add Berries last.  Cook on non-stick pan or griddle on medium heat. (our pancakes never stick to the pan) 

This recipe will make about 10 5-inch pancakes.  We usually do a triple batch because Emma and Ryan eat about 8 pancakes each!  Serve with butter and REAL maple syrup!  YUM!
